Serves 2.
Ingredients:
2 tablespoons olive oil, divided
1 lb. ground turkey
1 teaspoon kosher salt, divided
1 teaspoon freshly ground black pepper, divided
2 teaspoons Worcestershire sauce
6 manicotti noodles
1 medium red pepper, diced
¼ cup diced red onion
½ teaspoon red pepper flakes
2 cups baby spinach
1 (24 oz.) jar Bontà Della Arrabbiata Sauce
7 ounces ricotta
¼ cup shredded parmesan
1 cup shredded mozzarella
Instructions:
Preheat oven to 375 degrees.
Heat 1 tablespoon olive oil in a large skillet over medium heat until it shimmers.
Add the turkey to the pan, and season with ½ teaspoon salt and pepper. Break the turkey up with a wooden spoon, and when nearly cooked though add in the Worcestershire sauce. Reserve half of the cooked turkey, and refrigerate the rest for another use.
Cook pasta according to package directions, drain and rinse under cold water to stop cooking. Reserve.
Wipe out the skillet, and add remaining olive oil. Heat the olive oil over medium heat until it shimmers. Add in bell pepper and onion, and season with red pepper flakes and the remaining salt and pepper. Sauté for 3-5 minutes or until softened. Stir in spinach, and cook until wilted.
Remove pan from heat and let cool for 5 minutes.
Coat the bottom of a 10”x8” or 9”x9” baking dish with 1 cup pasta sauce.
In a large bowl, combine the ricotta and parmesan. Stir in the cooked turkey and vegetables.
Spoon the meat and cheese mixture into the prepared manicotti, and place in the baking dish.
Spoon 1 ½ cups sauce over the manicotti, and top with shredded mozzarella.
Bake uncovered for 30-35 minutes until the sauce is bubbling and the cheese is golden brown.
Let sit for 5 minutes before serving.
